Recipe: Kefir Sour Cream (+ Bonus Dip)
You’re now making regular batches of kefir and ready to experiment – let the fun begin! This recipe is SHOCKINGLY easy and a great gateway to so many more delicious dishes. By fermenting your own sour cream, you control the flavour, texture, and it always sounds impressive when you tell people, “I made this myself!”
Making sour cream with kefir is not only simple but also a fun way to reduce waste, save money, and level up your probiotic intake.
What You’ll Need
- 1 cup heavy cream or whipping cream (ideally organic for the best flavour)
- 2 - 3 tablespoons of fresh kefir (without the grains)
- A clean jar with a lid
Instructions
1. In your clean jar, combine 1 cup of heavy cream with 2–3 tablespoons of milk kefir. Give it a good stir with a spoon or shake it gently with the lid on to mix.
2. Cover the jar loosely with the lid (or use a breathable cloth secured with a rubber band). This allows airflow while keeping out dust. Allow it to rest at room temperature.
3. Now we wait (but not too long!). The mixture will start to thicken quickly but it needs some time to ferment to get sour and tangy. Check on it after about 12 hours to see if the flavour is right. The longer it sits, the tangier it gets, so adjust to your taste.
4. Once it reaches your desired consistency and flavour, stir it well, seal the lid, and pop it in the fridge. Cooling helps the sour cream set and slows the fermentation process so that it doesn’t get too sour.
5. That’s it! Enjoy your homemade sour cream on baked potatoes, curries, tacos, soups, dips and more.
Tips for Success
- Choose quality ingredients: Fresh, high-fat cream makes a richer sour cream.
- Don’t over-ferment: If left too long, it might separate. If this happens, just stir it back together or strain out the whey.
- Experiment: Add a pinch of salt or herbs after fermentation for a flavoured sour cream twist.
BONUS RECIPE: 1-Minute Heckuva Good Dip
Now that you have your sour cream, you are 30 seconds away from enjoying my personal favourite TV snack… onion dip! There is, of course, a healthier version of this snack that requires more cooking skills but when you’ve had a long day and want an easy treat, this hits the spot.
What You’ll Need
- 1 cup of your fresh kefir sour cream
- 1 tsp of onion soup powder mix (I use Knorr but I’m sure any will do)
- Your favourite dipping vehicle (chips, pitas, vegetable sticks)
1. In a bowl, mix your kefir sour cream with a few pinches of onion soup powder mix (start small and keep adding mix until you’ve reached your desired taste).
2. That’s literally it. That probably took less than 30 seconds… Enjoy!
