Blueberry Overnight Oats
A great way to start your day! A combination of chia seeds, rolled oats and kefir offers a protein-rich snack that is high in fibre and that doubles as a tasty treat. In addition to all the probiotic health benefits of homemade kefir, chia seeds contain omega-3 fatty acids, antioxidants and essential minerals.
This recipe can be easily adapted using different combinations of fruit! You can prepare it a few days in advance but remember that your homemade kefir is still fermenting, so the flavour will evolve the longer it sits. We find it’s best eaten within two days.
Ingredients
- 1 ½ cup of homemade kefir
- ½ cup blueberries (fresh or frozen)
- 1 tsp vanilla
- 1-2 tbsp maple syrup
- 1 cup rolled oats
- 2 tbsp chia seeds
Directions
Step 1
Blend together kefir, blueberries, vanilla and maple syrup to your desired consistency (doesn’t need to be completely smooth). We find it easiest to do this using a hand blender in a Weck jar, which can go directly into the fridge once ready.
Step 2
Add rolled oats and chia seeds to the kefir mixture. Stir until they are well combined and evenly distributed.
Step 3
Cover and place in the fridge for a minimum of two hours, and then enjoy!
