Pimento Cheese Dip
This one is an all time favourite – seriously, I’m eating it as I write this. It’s the perfect party snack with that healthy probiotic twist! It is also a great way to use up any over-fermented kefir you have building up in your fridge. And trust us when we say that, if you’re a cheese fiend, you will be making this dip more than once.
The best part is that it is quick and easy to make. Only three steps that, honestly, could have been reduced to one…
Ingredients
- 2 cups of homemade kefir cream cheese
- 2 cups chopped pimento peppers, drained *
- 2 cups grated old cheddar cheese
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp cayenne / to taste (this adds a little heat)
- Pinch of salt
* You can usually find jarred pimento peppers at the grocery store. However, in a pinch, any jarred hot pepper will work – but if it is chili peppers soaked in oil, give them a rinse and add them to taste or things will heat up real quick!
Directions
Step 1
Combine all ingredients in a large mixing bowl and stir together.
Step 2
Give it a taste! If you want more heat, include more peppers or cayenne.
Step 3
Eat it right out of the bowl or store it in the fridge – it will keep for several days but we’d be shocked if it lasted that long without getting eaten!
